Japan is famous for its pretty cherry blossoms in springtime, but autumn’s beauty shouldn’t be overlooked – think mountains, lakes, and riverbanks surrounded by a fiery potpourri of deep red, orange, and yellow leaves. To celebrate the season, Fairmont Singapore’s Mikuni brings two Tokyo-based chefs and the finest Japanese produce to Singapore this September.

Set your tastebuds aflame
From 9 to 13 September 2014, two guest chefs from Tokyo, Masahiro Kasahara (Sampiryouron restaurant) and Hisashi Yamashita (Bistro Q), will collaborate with Mikuni’s culinary team to present “Experience Beyond Japanese Cuisine”, where you can partake of a six-course lunch and eight-course dinner paired with sakes flown in directly from Japan.
Both chefs have been featured on TV and in magazines for breaking barriers in traditional Japanese cuisine with their innovative culinary approaches. Chef Kasahara is well known in the Tokyo dining scene for his inventive modern kaiseki. At Mikuni, he will serve seasonal chestnut and mushroom takigomi rice with a twist, by pairing it with mascarpone cheese, iburi-gakko, and red miso soup. Seasonal sashimi is also presented in contemporary fashion, alongside water eggplant and micro tomatoes.
Chef Yamashita, who imbues Teppanyaki dishes with a distinct French influence, will take fusion further in two dishes, one of which is the Rossini-style wagyu hamburg with foie gras and Bordeaux sauce.
Feast your eyes
Apart from pleasing your palates, Mikuni is pulling out all the stops and immersing you in all that autumn has to offer. Expect a tasteful display of autumn floral arrangements, plus never-before-seen snapshots of Japanese Geishas and panoramic sights in Kyoto, taken by walls celebrity photographer Russel Wong, on the walls. To add to the experience, service staff are dressed traditionally in intricately crafted, made-in-Japan kimonos.
