COVA Pasticceria - Confetteria was established in Milan in 1817 and is an elegant café which has gained recognition for its divine pastries, coffee, cakes and chocolates that are created from family-kept recipes that emphasise quality, top ingredients, taste and freshness, and are authentically Italian in taste. This tradition is very much adhered to at COVA outlets internationally. In Singapore, guests are also treated to a full a la carte menu of starters, soups, pasta, pizza and main courses, in addition to the extensive range of cakes and pastries. Similarly, the philosophy behind the food at COVA embraces the essentials of quality, great ingredients, and authenticity.

From the a la carte menu
COVA customers enjoy the Mozart (S$16) - a great one-meal salad that combines prawns seasoned with balsamic vinegar and caramelised on a pan, as well as rocket salad mixed with a pommery mustard and honey dressing. Must-tries include the Tower of dory fish layered with eggplant, sautéed leek and served with capsicum coulis (S$20) and Lamb Rack with sautéed spinach and chestnut in green peppercorn sauce (S$39). In addition, the homemade pizzas, sandwiches, quiche and pies are constant favourites.

From the bakery
All pastries, cakes, breads and cookies of COVA are freshly baked every morning at 5 am and ready before 9 am for breakfast. The kitchen crew and service staff are closely supervised, while our head pastry chef and team are trained by COVA Milan's executive chef, to ensure authenticity and consistency.

Since its establishment in 1817, COVA's finest confectionaries and pastries have stood the test of time for over 190 years. From the cake collection, time-honoured and well-loved creations are the Sacher - rich dark chocolate sponge cake layered with chocolate cream and a touch of apricot marmalade; Autunnale - two layers of Sacher sponge filled with a layer of chestnut cream mixed with marron glaces; Aurora - light vanilla sponge cake layered with chocolate and pastry cream; and Dolce Frutto - a light Italian fresh fruit cake with pastry cream surrounded with pistachio bits. Unique to the Singapore and Hong Kong market is the Mango cream - chiffon sponge cake filled with fresh Philippine mangoes and whipped cream. Popular pastries include the Bigne - essentially a cream puff - which is available in different flavours; the Mini lemon tart and Cannoncini - cigar-shaped puff pastry filled with custard cream. In addition, COVA also customises cakes for weddings and special occasions.

From the gourmet deli
A wide array of handcrafted sweet and savoury deli items are available for take away at the café. Particularly popular are the chocolates which are handmade in COVA Milan and brought in to the outlet here. The Gianduiotti - made with smooth milk chocolate and top quality hazelnuts - is a best seller - and also well-loved is the COVA coffee, which is made up of seven different Arabica blends from the finest plantations in Central America and Brazil. Other quality products include handmade Fruit jellies; Sugar bon bons; Antipasti; balsamic vinegar; jams; teas as well as COVA wines and liqueurs.
